Fig, Prosciutto and Blue Cheese Salad

Light easy salad full of fresh delicious ingredients. This spring/summer special is perfect for lunch or a dinner side salad. Pairs wonderfully with a Taylors Riesling or Prosecco.
Ingredients
- 6 figs
- 8 slices of prosciutto
- 200g gorgonzola blue cheese
- 150g rocket leaves
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- salt and pepper
Method
- In a small bowl mix balsamic vinegar, olive oil and salt and pepper together. Set aside.
- Cut figs into halves or quarters depending on the size.
- Bake or grill the figs for 5 to 10 minutes until soft and warm.
- On a serving plate, place the rocket then spread the prosciutto slices and crumble over with gorgonzola cheese.
- Drizzle dressing evenly on top.
