Miso Salmon and Soba Noodles

This delicious Japanese inspired miso salmon and soba noodle dish is perfect for a light meal.
Ingredients
- 1\/3 cup white miso paste
- 4 salmon fillets, skin on
- 1\/3 cup sesame seeds
- 1tbsp soy sauce
- 2tsp sesame oil
- 2tsp lemon juice
- 1tbsp vegetable oil
- 270g soba noodles
- Additional snow peas, edamame, scallions
Method
- On the skinless side of each salmon spread evenly the white miso paste. Sprinkle plenty of sesame seeds on top of the paste.
- In a large frying pan with oil, cook the salmon on high with the miso paste facing up. Cook for 3-4 minutes or until skin is crispy. Reduce the heat to low and turn salmon over. Cook for a further 2-3 minutes or until cooked through.
- In a medium saucepan of boiling water cook the soba noodles for 3 minutes or until soft. Drain and rinse with water and keep warm.
- Meanwhile, boil, steam or microwave additional ingredients such as snow peas and edamame until tender. Drain the snow peas and edamame.
- In a small bowl whisk together soy sauce, sesame oil and lemon juice to make the dressing.
- In a large serving bowl, place in soba noodles, additional ingredients (snow peas, edamame and\/or chopped scallions) and place on top or slice salmon to mix in.
