Prawn and rocket pastaChef Anna Nicholas

Ingredients

Serves 4
100g fresh rocket
400g linguine
Extra Virgin Olive Oil
4 cloves of garlic
2 large lemons
Salt and pepper to taste
Chili flakes
20 King Prawns (cooked or uncooked) de-headed
Shaved parmesan


Directions

Bring to the boil a large pan of salted water and add the linguine.

Meanwhile whilst the pasta is a few minutes from being ready to eat; heat a little olive oil in a pan (depending on whether your using fresh or cooked prawns this will change – use a little more for fresh prawns).

Add to the pan 1 crushed garlic clove and either cook the prawns until pink and cooked through or warm if pre cooked. Then turn the heat off and set aside

Once the pasta is al dente drain drizzle with olive oil and add the remainder of the crushed garlic - briefly set aside

Wash the rocket and place a handful on the bottom of the pan that you used to cook the pasta

Add a third of the pasta and then some more rocket, continue this process until all the pasta and rocket is in the pan

Mix up the pasta and rocket with the oil and add salt and pepper and chilli flakes
Add the juice of one of the lemons and taste – you may want to add the second lemon. Entirely up to you!

Mix the pasta again and divide between 4 shallow bowls, lay the prawns on top of one another and top with some shaved parmesan and cracked pepper
