Food type: Beef
This is comfort food for cold wintery nights or just when you’re in need of a cuddle. It goes fantastically with a comforting red such as Taylors Cabernet Sauvignon.
750 g kilo of chuck steak or gravy beef fat removed and cut into 3 cm cubes
Four brown onions cut into rings
Three cloves of garlic chopped finely
Three tablespoons of tomato paste
Two teaspoons of smoked Paprika
Salt and pepper
Half a cup of red wine
Dust the meat with flour and fry in batches in a heavy bottomed casserole dish until browned. Remove from the pan. Add some more oil and sauté the onion and garlic until the onion is soft. Add the meat, tomato paste, and the paprika. Fry off for a bit then add the wine and enough water to cover the meat by a couple of centimetres. Simmer very slowly stirring occasionally until very tender and the sauce is thickened – about 1 and half to two hours. Season with salt and pepper and serve with wide egg noodles, a dob of sour cream if you like and some crusty bread for mopping up the sauce.
