1 cup fresh basil
1 large garlic clove
1 tbsp pine nuts
2 tbsps grated Pecorino cheese
5 tbsps virgin olive oil
400g pasta of your choice
1 tbsp sea salt

Grind the basil & salt in a mortar, add the garlic and pine nuts and grind to a smooth paste.

Then add the olive oil and cheese, mix together. Boil the pasta in salted water until al dente.

Drain, then mix with pesto sauce.
