Food type: Lamb
500g diced lamb
1 red pepper cut into squares
1 large yellow pepper cut into squares
1 onion cut into wedges
2 large zucchini cut into wedges
For the marinade:
5 tablespoons olive oil
juice of one lemon
3 cloves garlic crushed
finely chopped shallots
2 finely chopped fresh chillies
salt and freshly ground black pepper
Combine the marinade ingredients together in a bowl.
Add the diced lamb and stir. When the lamb is coated, cover and pop in the refrigerator to marinate overnight.
Thread the lamb onto skewers, alternate with the vegetables.
Cook on a hot barbecue grill for about 10 - 12 minutes, turning them occasionally to cook them evenly without burning.
