Food type: Chicken


6 large chicken thighs, skin on
virgin olive oil
1 clove crushed garlic
75 g butter
2 tsp tarragon
1 tsp oregano
salt & pepper


Soften the butter and mix with the finely chopped garlic and tarragon. Refrigerate until butter is hardened.

Season chicken thighs, place in marinade dish with olive oil and oregano, marinate for 2 hours.

Remove chicken from marinade. Cut butter & tarragon mixture into cubes, insert under skin of chicken, bake in 180º oven for 20 – 30 minutes until cooked.
