Food type: Chicken
6 boneless breasts of chicken (skinless) or 6 chicken thighs (boneless and skinless)
125 ml olive oil
125 ml lemon juice
125 ml finely chopped fresh tarragon, mint, chervil and flat leaf parsely
aioli or plain yoghurt
crushed green peppercorns
Rub chicken with the olive oil, cut into bite size pieces. Roll chicken pieces in the mixed herbs.
Pan fry in olive oil. Serve with aioli or plain yoghurt mixed with crushed green peppercorns. Can serve with garden salad or put into warm crusty rolls.
