Ingredients
500 g beef, cubed
1 large brown onion
1 can peeled tomatoes
vindaloo curry paste
olive oil
water
Directions
Heat olive oil in pan, fry onions and sear the beef. Add curry paste and if necessary, add water. Simmer for 45 mins – 1 hour, when cooked, add tomatoes, cover and simmer, serve over steamed basmati rice.
