2 sheets of sweet short pastry
4½ cups granny smith apples, peeled cored and sliced
50 mls fresh lemon juice
¼ cup white sugar
1/3 cup raw sugar
½ tsp salt
2 tsp cinnamon
2 tbsp butter
Mix the apples, lemon juice, sugars, salt, cinnamon and cloves in a mixing bowl. Seat aside for ½ an hour.
Strain apples, reserving liquid.
Grease a large pie dish with butter and line with sweet short pastry. Put the apples into the pastry.
Put the reserved juices in a saucepan, bring to boil and simmer until the mixture reduces to a syrup.
Add butter and melt.
Pour mixture over apple slices in the pastry.
Top off the pie with the second sheet of pastry, crimp edges together.
Brush top of pie with beaten egg.
Put into a 190º oven for an hour or until juices bubble and apples and the crust turns golden brown.
