6 vine ripened tomatoes, cubed
1 red onion, sliced into rings
1 large red capsicum, finely chopped
200g Greek olives
220g feta, cubed
1 tsp fresh oregano
1 tsp salt
125 ml extra virgin olive oil
60 ml white vinegar


Toss together the tomato, onion, capsicum, olives, oregano and feta in a salad bowl. Season with salt.

Mix the vinegar and oil in a small bowl, drizzle over the salad, tossing to mix evenly throughout. Serve.
