a medium butter lettuce
455g bacon, cooked and finely chopped
100g artichoke hearts, drained and sliced
100g blue cheese, cubed
2 stalks celery, chopped
1 large red capsicum, diced
1 large green capsicum, diced
90 ml cider vinegar
1 large onion, finely chopped
20g brown sugar
20 ml whole grain mustard
salt and cracked pepper
30 ml virgin olive oil


In a large salad bowl, combine the lettuce, bacon, artichokes, blue cheese and capsicum. Cover and pop in the fridge.

In a blender or food processor, combine the vinegar, onion, brown sugar, mustard, salt and pepper; cover and process until smooth.

With blender running, add oil gradually and blend until thickened. Drizzle the liquid over the salad. Lightly toss.
