4 eggs
3 chicken breast fillets, chargrilled
½ French bread stick
olive oil
1 garlic clove
2 bunches rocket
2 medium avocados
Caesar salad dressing


Hard boil the eggs. Then peel and quarter the eggs.

Slice the char-grilled chicken fillets into thin strips.

To prepare the croutons, cut 12 thin slices of French bread and place on a baking tray. Brush with olive oil, then place under a hot grill in the oven, grill each side until golden.

Remove from oven and rub one side with a garlic clove. Set to one side and allow to cool, then cut into cubes.

In a salad bowl, combine 2 bunches rocket, 2 avocados peeled and thinly sliced, the chicken strips and egg quarters.

Drizzle with Caesar salad dressing and serve topped off with croutons.
