Food type: Veal


1 kg lean veal rump, cubed
1 medium onion, chopped
2 tbsp virgin olive oil
1 bay leaf
2 celery stalks
1 clove garlic, crushed
1 tsp fresh thyme, chopped
1 tsp fresh basil, chopped
6 large mushrooms, sliced
3 potatoes, quartered
4 medium sized carrots
125 ml beef stock
250 ml water
sea salt and cracked pepper


Sauté the onions in a large casserole dish until soft, add the veal and cook until lightly browned.

Add in the bay leaf, garlic, thyme, basil, then pour in beef stock and the water.

Next, add the vegetables and potatoes and sprinkle with sea salt.

Cover and bake in oven at 170º for 1 ½ - 2 hours, adding water if needed.
