3 cans of mixed beans
½ capsicum, chopped
½ Lebanese cucumber
1 small onion, finely chopped

for the dressing:
100 ml virgin olive oil
3 tbsp vinegar
1 tsp Dijon mustard
1 garlic clove, pressed
10 basil leaves, chopped
2 tbsp raw sugar


First, drain the beans and rinse in water. Drain in colander.

Put the beans, capsicum, cucumber and onion together in a salad bowl.

Mix the olive oil, vinegar, sugar, mustard, garlic and basil together in a jug and stir until smooth.

Pour the dressing over the bean salad ingredients, serve chilled.
