400ml coconut milk
2 tbsp Thai green curry paste
2 tbsp palm sugar
4 kaffir lime leaves
fresh coriander
400g green prawns
juice of 1 lime
3 spring onions, chopped
1 tbsp fish sauce
canola oil

Optional extras:
fresh red chillies
garden peas


Sauté the prawns in oil, add spring onions, add curry paste, sugar, lime juice and fish sauce.

Simmer on low for approximately 15 minutes. Gently mix through coconut milk. Sprinkle with coriander and serve over steamed basmati rice.
